Saltfish products have been well-known for hundreds of years – in the North mainly as a method of conservation and prolongation of the shelf life, but these days for its distinctive flavour. The saltfish is cooked and consumed all over the world, however mainly in Southern Europe, where it is known as baccala or bacalao respectively and is the main ingredient in regional dishes.
