The different saltfish products have been known for hundreds of years, long long time before freezers and canned food, so at that time this was the best way of keeping fish eatable.

Nowadays, the tradition of eating saltfish is still high, and nearly all populations around the Mediterranean eat saltfish or Bacala several times a month.​
